My original seacock is/was 3/4" the macerator is one inch. I had a real short haul (boat in slings, but still in well, raised just enough to get thru hull out of water) and I took 10 minutes to replace.

As I understand Cliff's question it had to do with the head intake water line. That should be a direct line from the thru hull to the head, with no vented loop.
The vented loop should be between the pump and the bowl. This is based on my setup per the instructions in my Raritan and other head manuals.

Go to the Garhauer site, look at the different options. Call them directly, they will make suggestions on blocks. They sent me drawings
on their suggestions and I ordered.

Nice setup on your MK II, unfortunatly the set on Paul's and my MK I is different and there is not sufficient space for the boards in the bracket you have on the port side. With a little modification a board my fit on each side. I still think the port locker is the best solution. My thought.

FWIW

I'm 6'5" with my boat shoes on. Your backstay looks to me to be factory height. I replace my standing rigging
3 years ago and maintained it the same configuration.

Like many I removed the teak trim.

I filled the holes, when your are two feet away you do not see where the holes were and after 2 weeks
I did not recall the teak trim ever being there.
