No leak when in slip or sailing on port tack but
switch to starboard tack and immediately start
taking water in forward bilge compartment

Hi,  Saltwater or fresh?  Sounds like it could be a leak in the fwd water tank if fresh.

If you have an older boat with cockpit drains, look for a cracked hose between the scupper and the thru hull. I had a Cat 27 with the same problem and it was a cracked hose. If you have a newer hull with the thru the stern drain, good luck.

See if your bilge pump outlet is below waterline when motoring. I believe that it may be if you are heavily loaded aft - full fuel tank and aft water tank. The answer is probably extending a service loop in the pump outlet hose above the water line. If this is the case, the bilge pump should be cycling frequently. This can happen on a MK1 with walk-thru transon. I don't know about the other stern designs.
