I think there's a safety benefit for fresh water? Less chance for electrocution for people in the water by the boat from a wiring issue? Yes, I agree with Stu, the Isolation Transformer is the optimal solution.

Lance : Because you are working on the AC side use the household/home AC wire gauge rule :
15 amps - 14 gauge
20 amps - 12 gauge
30 amps - 10 gauge
