None of the pictures are from a MKll so I'm not sure how much they apply.  I suggest you get a hardware store hinge close to the size you want (cheep) and use auto trim attachment tape or similar double-sided tape and do a mockup to check function and appearance.  Let me know how works out, anything to help getting into the fridge.  I keep a folding step stool to get stuff on any of the lower levels.  I find a lot of other uses for it.  Mine is similar to this

Here is a link that I found very interesting.  He has been adding lithium batteries and upgrading so may be best to watch in chronical order. Need to scroll down to the episodes with batteries. Disclaimer, I've only watched and haven't bought or installed anything.

I've also considered a check/maintenance on Shamrock's heat exchanger.  Like you there's never been a problem, so it's never made it to the top of the to-do list.  Also, it's not a common problem with boats in the Great Lakes, at least that I'm aware of.
I wouldn't do it as you suggested.  Reason, the Lime Away would be in the raw water pump.  Don't like that.  Also, there's the zinc anode (in the heat exchanger) to consider.  I admittedly don't know much about the Lime Away so I may be mistaken about that.
If I do some maintenance, think removing the end caps and taking a look would be the way I'd start.  Then go from there.  Maybe just reassemble.  Maybe more.

I suggest you rebuild the "old" Sherwood pump.  The rebuild kit wasn't much money and was easy to install. Nice to have a spare.

Shooting yourself won't help with the alignment.   :D 
It does take a lot of patience. 
It's always easy for me to get it close, but then getting it just right can be very evasive.  One thing that comes to me is, what is the condition of your cutlass bearing?  If it's not tight the rotation of the shaft will not repeat.  ie, As one end of the shaft moves up, down and sideways the other end follows.  I think it's impossible to get a proper alignment with a worn cutlass bearing.

First visually check the wires and connections, give them a light wiggle or very light tug.  Before doing that, make sure to shut the AC power off to the boat, if not the wire to the breaker will be hot.   
I've replaced one or two of the panel indicator lights.  Was so easy and simple don't remember much of the details.  Bought from Amazon, electric requirement (voltage), size (diameter) and appearance were what I looked for.  Got a very good match.  I would suggest you actually see and measure what you want to replace rather than relying on what someone else has replaced.  It's the kind of part that the factory would use what they had available.

I purchased from www.oceanbreezeac.com they were very helpful both with the layout and with some easy issues after.  The kit from them had almost everything needed, the only added purchases were some electrical and plumbing from local big box hardware.  Not much at all.  At their recommendation I didn't add a second shore power supply.  It's safe, the breakers would trip if overloaded.  I do see many installations with a second shore power but I've not had a problem.
My paperwork is on the boat, so from memory.  After a lot of thought I installed under the v-berth, lost only a pretty useless drawer.  Ducts were run behind the settees and the starboard v-berth cabinet with a box I made to vent to the v-berth and salon.   Added some sound insulation and it's no problem to sleep in the v-berth and it's quiet enough to be hardly noticed in the salon. I'm happy with that, although the aft berth doesn't cool well, but it's rarely used.  I think a booster fan would help. If you're one of the aft berth sleepers, may not work for you.  Cools enough for my occasional guest with the door open and a fan. 
One additional thing/cost I would recommend is a set of cockpit doors.  I have Zucor and very much like them.  Using the drop boards let in a lot of hot air every time entered.

If you haven't done so yet.  Clean the gaskets, water and paper towels work for me, and apply a very thin layer of Super Lube or equivalent.  That works for me.

Congratulations, hope you enjoy your 34MKll as much as I do Shamrock. Also, that you find this group to be as helpful as I do.  As for the air-conditioning project, there's a number of them well documented here.   I found them very helpful when I added air-conditioning to Shamrock.
FWIW.  Found that most of the "do this or else" list was not necessary on Shamrock.  Still wouldn't hurt to check them off.  I'm thinking of 2 that apply, reinforcement ring on the camshaft for the raw water pump and an engine bracket that was prone to cracking at a bend.

Congratulations and welcome.  I doubt it's the original mainsail.  So as others have said, you really need to see what you have.  I would suggest before spending much effort, time and money with existing sails to have them inspected by a good sailmaker.  "a stich in time saves nine" well applies to what maybe 30 year old stitching.   You may need to do a bit of searching and a visit or two to find a good sail loft.  Myself, that's a worthwhile and enjoyable experience.

I installed an EV-100 autopilot.  To get the steer to wind with the 2001 vintage Raymarine wind instrument needed to buy a "backbone" wire or adaptor, think that's what Raymarine called it.  Works sort-of.  I believe it steers to the wind instrument but the air up there is disturbed by the sails. Have the standard Raymarine mount attached to the front of the masthead.   Works best when wind is on the beam.   Most of the time the autopilot is set to a heading and I adjust the sails as needed.  For me I wouldn't spend a lot of money or time to have the steer to wind function.
I do think the EV-100 works best with a rudder position sensor.  I would recommend installing one if you don't already have one, it's the same as used on the ST-4000.

I'm with Ron.  It's my experience with my inverter anything that makes heat eats a lot of electricity.  That's why I carry 2 coffee makers, an electric eating Keurig and a propane sipping Mellita pour over. 
Don't forget switching to propane you need a dedicated propane locker and safety solenoid.

40 deg, maybe a little better, is about it for the best speed for Shamrock, will point higher but loose speed.  You may find this interesting.  See the links for racing certificate, I think I've seen more speed/wind angle graphs.  It maybe worth a search for you.
