That's my pirate monkey on the mast.  My next attempt will be to get more of the ceiling included so you can see the mast monkey.

How it's done?  I made my own Pano head so the lens can rotate around the nodal point (where perspective would not change)
Shot it on a Canon 5D mk II (portrait orientation) with a 16-35mm 2.8L at 16mm.  Images stitched together with Hugin.

This is true, but you wouldn't see the same quality.  The full size image is 11252 x 3052 pixels.  I'll try it with my iphone next time I'm down there and see how they compare.
